Second Breakfast

Second Breakfast was a full meal of bison sausages, hashbrowns, shaved smoked turkey, beans, eggs, tomatoes and mushrooms. This was the most amazing breakfast I've had all year. Tomatoes fresh from the garden packed so much flavor. The bison sausages had a great flavor somewhere between a breakfast link and a bratwurst. We went with bison and turkey since I don't eat pork. Since many traditional Irish and English breakfasts feature pork or bacon, I make it a challenge to find substitutes and variations.
