Supper

Mince pies

... and squash soup.

Dinner

Braised rabbit with carrots and celery.

Served with homemade rye bread.

Tea

Seed cake, Welsh tea cakes with dried cranberries, tea.

Hot sandwich of chicken with melted cheese and a salad with dried cranberries, walnuts, almonds.

Elevensies

Steak, turkey, Irish Gouda and Munster for cold sandwiches and pickles.

Second Breakfast

Second Breakfast was a full meal of bison sausages, hashbrowns, shaved smoked turkey, beans, eggs, tomatoes and mushrooms. This was the most amazing breakfast I've had all year. Tomatoes fresh from the garden packed so much flavor. The bison sausages had a great flavor somewhere between a breakfast link and a bratwurst. We went with bison and turkey since I don't eat pork. Since many traditional Irish and English breakfasts feature pork or bacon, I make it a challenge to find substitutes and variations.

First Breakfast


First Breakfast was a traditional Irish soda bread Farl served with jams and butter. Coffee and English Breakfast tea were to drink. To make the Farl, we used the recipe from Peters-Mums-Soda-Bread-Recipe.
Unfortunately, our baking soda wasn't the freshest and produced less leavening than we'd like. However, the flavor was warm and toasty. Marmalade and homemade raspberry jam sweetened the breakfast perfectly.
